You could say that I am addicted to Cuties. A Cutie junkie. That’s me. I mean I probably have enough vitamin C stored up to last until I’m 89. You think I’m joking. I’ve eaten so many of the dang things that I could probably win the World Championship for Fastest Cutie Peeler Ever. It’s a Cutie conundrum. And to make it worse I have two bags of the delicious little devils sitting in the kitchen at this very moment. I have a plethora of Cuties. I need a Cutie intervention.
So today I have found another way of devouring Cuties besides my usual method, peel-them-really-fast-and-inhale-them-like-my-life-depended-on-it. I put them in.. a salad!
FYI I only made this salad because I was having food induced guilt from eating 3 of the homemade cinnamon rolls that I made. And because I wanted Cuties. There is no hope.
We have been chowing on an AMAZING strawberry salad lately. I know you’re probably shaking your head at the thought of fruit in your salad but I’m here to tell you that it’s delicious and you need to broaden your horizons. We’re talking fresh green spinach, toasted ramen noodles, crunchy slivered almonds, and tiny little sesame seeds all topped in a perfectly sweet, tangy dressing. YUM-A-LUM. (I can’t believe I just said that)
So I took the spinach and instead of plopping those lovely strawberries on it, I put Cuties. Then I threw in some almonds and dried cranberries. And then put the dressing. So technically, I just subbed in Cuties for the strawberries. And then added dried cranberries. And took out the sesame seeds and the noodles. So.. only sort of is it the same.
I also grilled up some corn on the cob to make this corn salsa that I have been eyeing ever since I saw it. I am going to use it to make some burrito bowls sooner or later. Probably sooner because I’m not patient and I want that stuff in my belly.
Just a sneak peak:
Corn, corn, corn! Nothin’ but corn! (Name that movie)
I’m waking up early tomorrow to make scones! (these scones to be exact) And I am excited!! I will officially feel like a for realz baker. Baking scones with the sunrise. I’m a poet and didn’t know it.
Have a wonderful day. That’s an order. Love ya.
P.S. I’ll leave you with this picture of a funky looking grape we found today.
Have a”grape” weekend …. Thank you, thank you.
Here is the original strawberry salad recipe that you can sub in or out for.
Strawberry (or Orange Salad) Salad
1 head of romaine (I also like to use spinach)
1/4 cup of sesame seeds
1/4 cup slivered almonds
2 pkgs. Ramen noodles
strawberries, cut into bite sized peices
3 T butter
1 1/4 T soy sauce
1/2 cup sugar
1/4 cup vinegar
1/2 cup oil
Crush up the noodles and brown them in a skillet with the butter. Combine all the dressing ingredients in a small saucepan. Heat to a boil and cook until sugar is dissolved. Then stir in the packets of seasoning from the Ramen noodles.
*This can be modified in lots of different ways. Go salad crazy!
Get a bowl. Put all of that in it. Throw some dressing on it. Get a fork. (only one because you literally won’t want to share) and then eat it ALL. And don’t feel bad because it’s salad.
